Once September hits, I get that itch.
That fall-is-coming-even-though-it-never-gets-cold-and-I-still-need-to-celebrate-it itch.
Honestly, one of the only downfalls to Hawaii is that the staples of fall don’t really exist here.
There is no chill in the air. No apple orchards, pumpkin picking, bundling up by the fire fall fun.
But there is one thing that can transport me back east and back to fall… And it is baking.
I LOVE baking.
Truly from the bottom of my heart, just love it.
It is a creative and relaxing outlet that (usually) brings other people joy, as well as my self.
And if there is that anything I love more than baking, it is of course fall.
And the only thing I love more than fall, is my babies.
Now bring together baking, fall… AND my babies… This is a pure joy combination that cannot be topped!
I’m lying… it can be topped by one thing… something that helps me bake with ease! (Let’s face it, while I am crazy about baking, throwing two babies under two into the mix does come with it’s challenges!)
And that something, is without a doubt Pepperidge Farm® Puff Pastry.
So once the itch starts, I always plan my first fall themed party of the year, complete with the perfect fall dessert!
This year, I decided to do something a bit more simple and kid friendly since Reef could join in the festivities!
Personal Apple Pies using Pepperidge Farm® Puff Pastry Sheets are a quick, easy and Pinterest worthy dessert that really anyone can bake at home in no time!
Preheat the oven to 400°.
1. Start with one package of Pepperidge Farm® Puff Pastry Sheets. (You can find them at your local grocer in the freezer section. You are only going to need one for this particular recipe, but you can freeze the second sheet for later use.)
Once the sheet has thawed roll it out slightly onto a lightly floured surface.
2. Now to make this version, it is best if you have individual ramekins for each guest. If you don’t however, you can just as easily make them in a muffin tin. Whichever option you choose will determine how large you need to cut the Puff Pastry Sheets.
Once you figure out the size, cut out circular sections to fit.
Spray each ramekin with non-stick cooking spray and place the Puff Pastry Sheet sections into the bottom. (You can add an egg wash to the top if you would like to make it more golden, but it’s not necessary since it will get covered with the apple pie mixture.)
Place the ramekins on a baking sheet and place in the oven for approximately 15 minutes. (Keep an eye out for when they start to turn golden brown and rise.)
3. While the Puff Pastry Sheet lined ramekins are in the oven, start on your apple pie filling.
Take the 3 apples, peel and cut them into small uniform squares.
Add lemon juice to the apples and stir.
Next add cinnamon, brown sugar, vanilla, nutmeg and flour to apple mixture and stir to coat evenly.
4. Once the Puff Pastry has gotten flaky, remove from the oven and top with apple mixture and butter.
5. Next is the fun part!! Topping your apple pie filling.
For this step there are a variety of ways that you can use your Puff Pastry Sheets.
You can do a traditional top and completely cover your filling, or do a simple yet beautiful lattice top.
OR you can cut out little shapes (I tried apples and leaves.)
You could even do different letters to represent different people attending your event.
Honestly the sky is the limit here!
Once you have decided on one option (or even a combo!), do an egg wash and put your pies back in the oven for another 15 minutes. (Again, keep an eye out for the Pepperidge Farm® Puff Pastry to turn a golden brown.)
And voila! You are done making your Pepperidge Farm® Puff Pastry Sheets Personal Apple Pies!!
It is best to serve these as soon as you take them out of the the oven, and they are wonderful when topped with caramel syrup. And maybe even a little ice cream!! (I recommend serving the ice cream on top if you do a simple Puff Pastry Sheets topper. But if you do something a bit more creative like shapes or letters I would recommend serving the ice cream on the side.)

(3) Gala Apples
(1) Cup Brown Sugar
(2) Tbsp. Cinnamon
(2) Tsp. Nutmeg
(3) Tsp. Flour
(2) Tsp. Vanilla Extract
(4) Tsp. Butter (1 Tsp. per Ramekin)
Caramel Syrup (Optional for Drizzle)
